I’m Charlotte – a twenty something dietitian on a mission to make nutritious taste delicious!
I’m not your average type-a, “granola” dietitian. Wanna know why? Because my absolute favorite foods are pizza, cookies, mac & cheese, and chipotle, and I’m a freakin’ procrastinating, disorganized mess (especially in the kitchen, hehe). Food is my lifeeee – I mean, isn’t it everyone’s?! No but really, I think, sleep, breathe, and (obviously) eat food. And my sweet tooth is outta control.
So why’d I start a healthy food blog?! Because with such an intense love for all things pizza and other high carb foods, I got really creative at making low-carb versions of them. My favorite thing to do in the kitchen is swap in veggies for higher carb foods like grains and potatoes. WOAH woah don’t get too mad yet – I’m not saying carbs are the devil! Dietitians can get so mad about that… But how is swapping in veggies for grains and taters here and there a BAD THING?! You’re getting MORE VEGGIES PEOPLE. And following a low-carb diet isn’t bad either! There’s no one-size fits all diet for everyone, we all know this. My diet consists of mostly low-carb Monday through Friday afternoon, then Friday evening through Sunday is a free-for-all – a girl’s gotta live.
Anywhoooo, here you’ll find my veggie-swap concoctions and lower-carb sweets that are sometimes Paleo, mostly Gluten-Free, and ALWAYS delicious 🙂
