Have you ever had one of those long and exhausting days when you think to yourself, “ughhhh, I’m not making S#!T for dinner when I get home.” Let’s be real, we all experience that feeling quite often. And that’s usually when I resort to ordering pizza from the local pizza place, because I’m lazy, and because pizza makes the stress go away <3 But then you remember that it’s the second or third time you’ve had pizza that week. Why can’t pizza be healthy (insert in-pain-but-not-yet-crying-face emoji here)?! OH WAIT, it can!
We’ve all heard of making a pizza crust from cauliflower, but sometimes we’re just not in the mood or feeling that ambitious. That’s when Cali’Flour Foods pizza crusts come in handy! Pre-made cauliflower pizza crusts that can be stored right in your freezer! They take the stress of ricing a whole head of cauliflower away.
This being my first time trying a Cali’Flour Food pizza crust, and also because I was feeling extremely lazy, I decided to go with a super simple buffalo chicken pizza. I’d made a white sauce pizza using Greek yogurt before, but this time decided to use Siggi’s 0% Plain Skyr (packed with SO MUCH PROTEIN) for my sauce base. There’s no way in hell I was using blue cheese for this pizza (ewwwwey), so I opted for the buffalo + ranch combo and mixed the skyr with some Simply Organic dry ranch mix. Given that there was cheese already in the crust and that the sauce was dairy-based, I decided to omit a cheese topping, and trust me it wasn’t missed. As for the buffalo chicken topping, all I did was mix cooked and shredded chicken breast with some Tessemae’s Mild Buffalo Sauce (my fave!).
Long story short: Yes, you can enjoy pizza on a weeknight without feeling guilty and without dedicating an hour or two of time to making it. You’ll love this easy-peasy-pizza that’s low in carbohydrate and calories, gluten/grain free, high in protein, and ONLY 6 INGREDIENTS!

Never choose between pizza & buffalo wings again – this infamous duo is lightened up using only 6 ingredients, including a Cali’Flour cauliflower pizza crust & a Siggi’s skyr-based white sauce!
1 Cali’Flour Foods Original Italian Cauliflower Pizza Crust
1/2 cup 0% Plain Skyr (I used Siggi’s)
1 Tbsp dry ranch seasoning mix (I used Simply Organic)
1 cup shredded rotisserie chicken breast (skin removed) or ~5 oz cooked and shredded chicken breast
2 Tbsp buffalo sauce (I used Tessamae’s Mild Buffalo Sauce)
1/4 small red onion, thinly sliced
- Preheat oven to 375 ˚F.
- Pre-bake Cali’Flour pizza crust for 5 minutes.
- Meanwhile, in a small bowl combine skyr and ranch seasoning mix. In a separate bowl, combine shredded chicken and buffalo sauce.
- Spread skyr mixture in an even layer on top of pizza crust. Top with shredded chicken and red onion.
- Bake for an additional 10 minutes.
