Raw Cashew Cookie Dough Blizzard (with Cauliflower!)

Your favorite cookie dough blizzard gets a healthy makeover using raw cashew cookie dough and a secret ingredient… cauliflower!


For the Cashew Cookie Dough:

1/4 cup cashew butter

1/4 cup flaxseed meal

4 dates

2 Tbsp Enjoy Life mini chocolate chips

For the Blizzard Base:

2 cups unsweetened vanilla cashew milk

1 1/2 cups frozen riced cauliflower (I used Trader Joe’s)

1/3 cup vanilla-flavored protein powder (I used Kura’s Grass Fed Protein Powder)

1 scoop collagen powder (optional – I used Vital Proteins)

1/2 tsp vanilla extract

1/4 tsp cinnamon

1/8 tsp baking soda (optional – for flavor)

Ice to thicken


  1. In a food processor, combine cookie dough ingredients. Form into small balls (about 1/2 Tbsp of dough). Refrigerate while making blizzard base.
  2. In a blender, combine blizzard base ingredients; blend until completely smooth. Add 3/4 of cookie dough to blender, and pulse until just combined (you don’t want the dough completely broken up).
  3. Pour into two glasses, and top with remaining cookie dough.
